What it’s like at LAVO at the Palazzo Las Vegas?
When you step into LAVO it seeps Las Vegas nightlife. It’s the place you’ve heard about, the place your friends talked about or the place you’ve seen in the magazines. The lighting is just right, the music is playing at just the right level to make you want to start dancing and the crowd is just getting ready for a late Las Vegas evening.
The dining room is roomy and feels like an ultra lounge, you get the sense that your are a VIP and the rest of the crowd is along for your ride. The women in the room out number the men by large numbers and the club upstairs seems to be no different.
How’s the food at LAVO at the Palazzo Las Vegas?
Order a Saggio, the drink is like a visit to the Canyon Ranch Spa, it’s refreshing, light and begs you to have a second. The wine list is a bit slim on selections by the glass relative to other restaurants at the Palazzo and Venetian but it does have a few decent finds.
Rely on your server at LAVO as it seems that they have employed some knowledgeable individuals who can appreciate the craft of cooking as well as your tastes. There is nothing more important than a server who understands food, understands pairings and understands people.
Like any Italian restaurant the bread is where you start and the garlic bread saturated with olive oil, garlic and herbs is addicting, dip it into the marinara if you need a bit of a change in taste and wash it down with an Italian red.

- Pancetta wrapped shrimp and a field green salad with a light vinaigrette - This is not the salad you get at the pizza joint down the street, the shrimp dance on a bed of caponata and you can only imagine that there is some Sicilian maiden in the back putting in some time getting this recipe right.
- Fried Fresh Mozzarella - The tomato sauce will is such that you might ask for a side of it and the champagne vinaigrette will make you a vegetable eater.
- Kobe beef Meatball - Whipped ricotta cheese, on a puddle of pomodoro. Let me explain, this can easily be combined with the garlic bread and a glass of wine for the best meal of your vacation.
- Fetucinne with scallops - House made fettuccine, and scallops that dissolve in your mouth along with simple butter, garlic and asparagus tips. If you enjoy scallops you will seek out the chef to answer some serious questions about how to get a scallop to perform as well as these do.
- Chicken Marsala with spinach, - This dish is simple so it is in contrast to some of the other things on the menu. However, if you are going for something a bit on the simple side this dish is a good option.
- Pollenta fries- Order some just for snacking or a s sharing side for the table, very good, simple but tasty.
- Desserts - Bread pudding - You have been warned, this is the dessert that will excite you beyond belief. This dessert is so good you'll plan your next vacation around making sure you have it again.

Saggio - Stoli Blueberry, Sage, lemon juice - This is a spa in a glass, oh yeah, it will take you down, but you'll feel so refreshed while drinking it.
Sicilian Sun - A blood orange vodka drink that will get you started and off to the club upstairs.
White chocolate, raspberry martini - This after dinner drink is the combination of sweet and martini that should end you meal on a high note.
