This is not the best Cassoulet I have ever had, no that honor goes to my childhood friend Claude's mother. He would invite me over and the house would be filled with the scent of her childhood French farmhouse. The Cassoulet was fabulous because Claude's sister, Claudette was serving me and it was no secret that my crush on her would make me believe anything she served was divine. Yes, that was the best Cassoulet ever, however, it was as no nonsense as could be, marginal ingredients, maybe some pork, maybe leftovers from the week. Fabulous.

The cassoulet is simple, it's comfortable and it should be free of pretense. That is what you will get at Comme Ca at the Cosmopolitan Hotel.A solid version of a traditional dish, I was disappointed that I finished it so quickly. I wanted more but for fear of being chastised by my dining companions I held back. The duck confit was flavorful, the pork held my attention and the beans had enough texture that I was sure that the process by which this slow cooking dish was constructed was performed exactly as it should be.

The truth is, a proper Cassoulet is a lot like listening to a good story that you've heard a hundred times. The variations should be minimal but the basic beginning, middle and end are still there. Like Mexican pozole or cocido, Cassoulet to me is an opportunity to sit with a hearty bowl and enjoy the simplistic nature of food.

Comme Ca is serving it on Tuesday evenings and it is seasonal, so that means you should race over there and try it. Grab a hearty wine and bowl of Comme Ca Cassoulet.
