What it’s like at Switch at Encore Las Vegas?
You might have heard that the landscape of Las Vegas was changing when Encore opend but what you might not have heard was that Switch was doing very much the same. The décor changes as you eat and you feel like the entire meal is a series of events that cannot be forgotten but also are difficult to entirely remember.
Chef Marc Poidevin is a classically trained French Chef who brings an impressive resume to Encore Las Vegas. If you are a fan of Le Cirque then you might have had his Barolo Sauce and if that is the case I need say no more. As the Executive Chef you can probably expect the very best when it comes to ingredients and that flare of French cuisine that keeps you captivated bite after bite.
What I am looking forward to at Switch at Encore:
- The SWITCH seafood tower for 2 – Oysters, Jumbo shrimp, Tuna Tartar, lobster, bay scallop ceviche
- Burgundy Snails – Seared with Pernod, “Provencal” garlic-parsley butter
- Porterhouse with a Bearnaise sauce
- Braised white coco bean ragu
