What it’s like at Diego Mexican Cuisine Las Vegas?
What you’ll find at Diego is very much what Mexican culture is like. It’s not a super fancy place while not being entirely casual either. It’s like going to your Mexican grandmother’s house where proper behavior is expected only to find out that your three uncles are in town and they already have begun their tour of Jalisco by way of the Tequila on the top shelf. Everyone behaves themselves but there is no illusion that Las Vegas is right outside the door and that a good Mexican meal is the premise for a long and fun evening. The Margaritas are flowing, the conversation is going and the chips and salsa make you linger a little longer over the menu.
How’s the food at Diego Mexican Cuisine Las Vegas?
You’ll notice the mainstays of Mexican restaurants soon after arriving: margaritas, guacamole, salsa and tortilla chips but as you scan the menu you'll find what's missing is those items that you might have come to understand as Mexican food. If you are looking for a giant stuffed burrito, you won't find it here, but you will find an approach to Mexican food as it is done in plenty of locations south of the border. Diego Las Vegas is attempting to keep a foot planted in Mexico while delivering a fine dining experience in Las Vegas.
What you should try at Diego Mexican Cuisine Las Vegas:
- Guacamole –You have to try this for the simple reason that the guacamole cart comes to your table and you can get it exactly like you want it. I typically like it with a lot more kick of spice (Serrano Chile) and a clear presence of citrus. It’s meant for two but I had way more than my share.
- Taquitos – The Guajillo salsa is where the action is with this small plate.
- Empanadas – The crusty outer shell is filled with chicken in an Ancho Tomatillo sauce that screams comfort food.
- The Sea Bass is topped with baked crab and it is simply an excursion to the ocean, not really Mexican cuisine but you appreciate the flavors.
- Puerco Pibil – Get your hands dirty with a warm tortilla, some guacamole and the green salsa. You’ll make your own tacos and then wash them down with a Diego Margarita.
- Chicken Mole – If you are familiar with the Oaxacan version you’ll be pleased but I would ask them for a little extra sauce. The chicken is not swimming in the mole as it should be but that works well for those not entirely fond of the slightly spicy red sauce.
- Tacos –This is the hidden gem at Diego, the fish tacos are as if you were on the dock at the Marina in Mazatlan and the Tacos Al Carbon remind me of a Pepe’s in Cabo San Lucas, in other words, they are the real deal.
What Will You Drink at Diego?
- The Diego Margarita – The classic margarita with fresh ingredients, exactly as they are meant to be. Have a few.
- Diegos Martini Picoso – Sign me up for the fan club, this might be my new favorite drink on the Las Vegas strip. It’s spicy and the use of Sotol takes the flavor to a new level.
