Define perfection. My notes from my recent meal at Carnevino at The Palazzo Las Vegas have a simple note as I attempt to describe the New York Strip "DEFINE PERFECTION." I wish I could be more specific. I want to tell you that after the the Bone-In New York Strip was carved table side that objectively tasted and wrote down notes to deliver to you, the reader, an idea of what to expect, but I cannot do that. I wrote down "DEFINE PERFECTION." I think it is highly unprofessional of me to completely disregard my job just because a piece of beef was so packed with flavor that it distracted me. I think that it is a shame that you might be considering a meal at Carnevino Italian Steakhouse at The Palazzo
and all I can tell you is that my meal came as close to perfect as I can reasonably expect. Anywhere.
I can tell you that in my review of Carnevino I have compared the New York Strip to beef flavored cotton candy. I can also tell you that since my wife was not with me I almost kissed the server because he delivered to me a piece of dry aged beef that moved me. I can also tell you that the beef cheek ravioli was so good that I feel compelled to have my children try that dish so that they can understand how good food can be.
What I fear I must tell you is that you might have a meal that will change how you view your favorite steakhouse. Carnevino at The Palazzo is that good.
